Hip Easy Chocolate Cupcakes w/ Peanut Butter Frosting

Any chocolate paired with peanut butter fans here?

If you start to see a pattern here, well, there is….I am a lover of all things chocolate (& protein!) I use my Vegan Chocolate Shakeology in a ton of my sweet tooth recipes!

Today is no exception! I made up a batch of cupcakes for the kids for St. Patrick’s Day, and realized I needed something to keep myself on track as well! The recipe for the frosting originally uses vanilla shakeo, but I went with the chocolate option. 😀

This week we finished up our Gather Round Homeschooling :Indigenous Peoples Unit, we did a mini St. Patrick’s Day study, and finished off with these cupcakes! <3 We are spending most of our days outside and enjoying fresh air! The kids are excited to do our next units at the park and spring field trips!

The longer days and more vitamin D in our system is making this mama feel healthy and strong. My Thyroid meds have been upped, I’m back on my regular vitamins. I am grateful for a little bit of a normal routine again. Between all of these things, paying off debt to get ourselves a mortgage when the time is right, staying focused on God’s promise for us, and working out to stay sane (okay and build up my muscle tone I lost after my thyroidectomy), I am so blessed and working on lowering my stress.

Two Words = Laughing Gas

Nitrous oxide, commonly known as laughing gas or nitrous, is a chemical compound, an oxide of nitrogen with the formula N ₂O. At room temperature, it is a colourless non-flammable gas, with a slight metallic scent and taste. At elevated temperatures, nitrous oxide is a powerful oxidiser similar to molecular oxygen.


says no one ever. But I am here to tell you it is possible. Well, in my experience anyways. I found the dental college through my mama. She used it all the time from what I can remember. So naturally, moving back here (Prince Albert) I sought out the first appointment available through them.

Fast forward to present day:

I had my first ever root canal. Normally, I would just have any mention of a root canal pulled. Not today. Today’s root canal was suggested because of the placement of the tooth. Front and centre stage!

I was offered laughing gas -aka nitrous oxide- the head Doc – Dr. Wong & Vanja made an excellent team in the procedure room today! Vanja is a fourth year student who is confident in her skills! I am so blessed to have had such a great experience in the office today.

Let me set the record straight…Root Canals get a bad rap. Because no one ever shares how great their experience went. It seems that we all know how to share negative reviews as fast as lightening but not too many share about the positive reviews on anything. Whether it is a store, an appointment, a business, etc, a negative one spreads like wild fire.

I must throw in this disclaimer: I have high functioning anxiety. A dental appointment breaks me. Panic attacks, shivers, sweaty, hyperventilating, the lot….Today proved to be the same, which is where the LG came into play. Thank you science & medicine. *side note* it’s ok to take the meds. Accept help. Push your pride aside and stop the tough guy act*

Try this today, be kind. You never know who is walking through what today. Lift your chin up, smile (even through the mask), compliment someone, share a positive note with someone, share a thank you with a local biz (or not local, whatever!). Make someone’s day today, who knows, they could’ve just experienced their first root canal?!

I could never understand how people could go for hours in the morning without needing/wanting to eat breakfast. Most people I spoke with were too busy, too tired, didn’t feel like it, ran out of time, etc….These are the solution. Make ahead, freezes well, grab and go, protein packed, good for you….checks all the boxes!

This gravy pourer by Curtis Stone is my second favorite kitchen tool! It gets all the lumps and chunks out of not only gravy, but pancake batter! BONUS!! A kitchen tool should almost always have a multi-purpose function to end up in my kitchen!

I do use Beachbody products, I do support and suggest them wherever I can. I will never force you to shop with me. Just know that I am here if you ever do want to try any aforementioned products in my baking! I’d love a rating on this! Your feedback is how I can improve!

Earl Grey Lemon Cookies

Sugar free, gluten free, dairy free

Question of the day: Do you write grey or gray?

However you write it, these cookies don’t care! The taste will forgive you!

Now you might cringe at the idea of putting tea leaves in baking, but trust me, it works! I love lavender and lemon together, so naturally I had to try my favorite tea flavor – EARL GREY! I feel like a great cuppa tea has so many calming attributes.

Some tea facts :

  1. TEa is really popular. It is over a $40 billion dollar industry.
  2. Green and Black tea are made from the same plant.
  3. Tea Smugglers are a real thing (hello 18th century)
  4. Black tea has oxalate (chemical compound) in it which can cause renal failure when ingested often. Be aware.
  5. Some cultures add butter to tea. In Tibet, it’s called po cha .
  6. There is a wrong way to prepare tea.
  7. No two teas are the same.

Food blogging and blogging in general feels so unimportant to the whole as a world. Wars, weather, death, viruses….is there any room for joy through writing?

I’m going to keep writing. It feels like a purpose right now. I have a yummy GF/DF/SF recipe for you today. Realizing that I am a chaotic, messy baker, I do not have the “proper” technique of sharing how I bake! I literally just throw things together most days!

So….I’m an organizing…specialist!?

2021 has begun with me doing some updating of education! I’m having fun with these projects and to start I’m working on my own home as well as a few close friend’s homes!

I have just finished up my first course – Certified Organizational Specialist!

Stoked to put all my new found knowledge into practice starting in my own home! What better place than to make your family guinea pigs?! 😀

I am diving into shelves today! If you could organize only one room in your home (no limit on budget!) what would it be? This is not about painting or ripping out walls. It is about decluttering, purging, organizing. So, where would you begin today?

Unplug: Boundaries & Priorities

We had pressed pause on our schooling for about a week. We ran out of ink….dun dun dun…

What a world we live in hey? Everything is at our fingertips. Technology being the fastest mode of communication. Hearing and seeing things when they happen, as they happen.

I am grateful for this communication. But have you stopped to unplug lately? The first question my husband asks in his Restart First Computer Solutions biz…”Have you tried restarting your computer?”

It is quite a thing to simply unplug. Reset.

Take some time away from devices.

Take time to study a book.

A scripture.

A piece of art.

Play a board game.

Read a book.


Spend time in nature.

Spend time with your creator.

All of these are beautiful ways to reset your heart, mind, and soul.

Now this is coming from me, someone who runs her entrepreneurial biz 95% online. Yet, I realize the importance of keeping my cup filled. I try my best to unplug, step away and reset when I need to. I recognize when my cup is drained…when I feel myself crashing with the busyness of mamahood, coaching, homeschooling, and being an empath…I take a step back to refocus, rejuvenate, reset so I can come back and do my best work….raising and teaching my babies, coaching my clients, and prioritizing my empathy (hello turn off the news!).

Likewise, taking a moment to set up your boundaries and priorities is at the top of the mountain of lists that one should recognize as importance. Those boundaries become your peace of mind when it is time to think about unplugging.

Go into this weekend with a new look at your boundaries. I am here if you have any questions on where to start! Sometimes your mental health depends on this more than you know.

Even through the storm….

Post-op 4.5 weeks. HOW? I feel like it’s flown by, but at the same time I am struggling daily to understand this new journey without a thyroid. I struggle with pain, my incision, my muscles, sleep, fatigue, my cycle, moods, foods…I am agitated.

Fun fact: Your thyroid is in your neck area, not your thighs….go figure (I say this with sarcasm, because some people truly didn’t know!) Thyroidectomy happened on December 14th, 2020. I woke up after the surgery content that I did not have any adverse affects to the anesthetic. Due to C*19 I did not have anyone with me (as a ton of people who’ve walked this journey before me). I was upset. I do remember that. I was upset at the fact that they could tell me seconds after me waking, that I had 6 lymph nodes removed that were not on the scan, that were indeed cancerous. I remember questioning the doctor (who is amazing btw) why they could tell so soon that these were cancerous but some people wait FOREVER to find out their diagnosis. He didn’t have an answer for that. okay???

I have cancer. I have joined an amazing community of Thycan Warriors. I am now playing the waiting game. Waiting for labs, waiting for appointments. Thanking God that I finally received a letter from the Saskatoon Cancer Clinic with a phone call appointment for February 1st. Joy.

If I’m being honest here, C*19 is pissing me off. I realize the heaviness of it. I realize it effects us all differently. But I won’t apologize for it pissing me off.

This is the storm. I tell myself that even through all this CRAP I’m choosing to trust God. Why? Because he is a good, good Father. Because even though I don’t have answers to why I have cancer; why I have anxiety and depression; why house hunting is taking forever; why we moved away from my folks just to be thrown into this diagnosis…God knew all of this before anyone.

Indeed, the very hairs of your head are all numbered. Don’t be afraid; you are worth more than many sparrows.

Luke 12:7

So this is where I am today. Two weeks into the new year. I will be steadfast and trust in the Lord with all my heart, soul, & mind.

Hi, my name is Sara, and I struggle with Attention Deficit Disorder.

I just closed 13 tabs so I could sit and write for 15 minutes without that distraction. My kids know that it’s park time in 30 minutes. My brain allows me to write, but only when the itch strikes.

Story time:

My last job was back in 2016. I loved it! I was working part-time at a health food store. The knowledge was pouring in and I was absorbing every morsel. I only stayed there for 2 months. (in that 2 months I also was on holidays for 2 weeks) I came home from those to be told that I was on the verge of losing my job because of the way I worked. Start a job, move to the next, help a customer, get sidetracked, move back to the first job and so on. That’s how I work. That is literally my life in a nutshell. (I quit my job, because I am stubborn and at the time didn’t know I had a problem.)

I’ve had a dozen jobs since I was 15 –hello 20 years!

Since this situation, I’ve come to understand what I am going through. It also opened the flood gates that explained so much of my life as a child and early adulthood. University would have been that much “easier” if I had the resources to deal with ADD.

I now have two sons who exhibit similar behaviors.

Present Day:

This morning, during my devotions and bible time, I was listening to a podcast on leadership from Craig Groeschel titled ‘Your Most Focused Year Ever. I don’t want to just pass the time by in my life. I want to be focused on what matters the most. I want to be a leader in my immediate family, as well as leading women from all over the world.

I’ve been focusing on – not necessarily the wrong things – but too many things. Too many directions. I have one too many tabs open in my brain. I need to become focused on what God has for my life and the rest will either fall away or happen at some point in my life. I am not ready to balance 9,124 ‘things’ in my life.

  2. wife
  3. mom
  4. health and wellness coach
  5. makeup artist
  6. landlord
  7. traveller
  8. caregiver
  9. cancer patient
  10. ADD
  11. maker of things (crafts)

Some of those are dreams, some of those are works in progress. All of them are on my horizon this year. Obviously momming and wifehood will be around for awhile. Cancer, I am going to kick it’s ass to the curb. ADD I will be managing continually. Travelling is on the back burner. I do plan on travelling locally and exploring our beautiful Saskatchewan prairies in 2021!

My distractions?

  1. SOCIAL MEDIA How can something I run my business from be a distraction? EASY. I get so wrapped in scrolling, especially when my mood is sour. But ya know what? It puts me into an even bigger funk! Go figure! (insert sarcasm here)
  2. The devil. He is a liar. He wants to see us fail. He doesn’t have any good about him. The minute your feet hit the floor he looks for ways to torment.

I challenge you to take a listen to the podcast above. Secondly, women and mamas especially…catalog your to-do’s, your dreams, throw em on a vision board. What is thee most important ticket on there? What can you scrap? How many hours can you save without distractions? You’ll be amazed at the productivity level after you become focused on the best year yet.
